Fig Almond Roly Poly

Ingredients

  • cups all-purpose flour 225g
  • tsp baking powder
  • ½ tsp salt
  • 6 tbsp salted butter 85g
  • ½ tsp lemon oil
  • 6 tbsp to 7 cold water
  • ¾ cup fig jam 160g
  • 2 tbsp ground almond 12g

Instructions

  • Sift all-purpose flour, baking powder, and salt into a large bowl.
  • Stir in grated butter and lemon oil. Add water, a tablespoon at a time until just enough to form a soft dough.
  • Knead lightly until smooth.
  • Turn onto a lightly floured surface. Gently roll out into a 12-in x 10-in rectangle.
  • Spread fig jam evenly over the dough. Sprinkle ground almond on the top.
  • Starting at one of the short ends, roll dough loosely into a log.
  • Place roll seam side down on a baking sheet. Bake in a 350°F (180°C) for 40 minutes or until risen and golden brown.
  • Allow it to cool slightly before cutting into thick slices.
